Ingredients

  • 1 cup all-purpose flour
  • 1 cup whole milk
  • 3 large eggs
  • 1/2 teaspoon salt
  • 1/4 cup beef drippings (or more for the pan)

Instructions

  1. 1Mix flour and salt in a bowl. Make a well in the center.
  2. 2Beat eggs and milk together, then gradually whisk into flour until smooth.
  3. 3Let batter rest for at least 30 minutes (or up to overnight in the fridge).
  4. 4Preheat oven to 425°F. Add 1 teaspoon of drippings to each cup of a muffin tin.
  5. 5Heat the tin in the oven for 5 minutes until drippings are smoking hot.
  6. 6Quickly pour batter into cups, filling halfway. Work fast to keep fat hot.
  7. 7Bake for 20-25 minutes without opening the oven door.
  8. 8Puddings should be puffed and golden. Serve immediately.

💡 Pro Tips

The key is very hot fat and a hot oven. Room temperature batter works best. Never open the oven door during baking!
