Ingredients

  • 3 lbs russet potatoes
  • 4 cups duck fat
  • Sea salt
  • Fresh herbs (thyme or rosemary)

Instructions

  1. 1Cut potatoes into 1/2 inch thick fries. Soak in cold water for 30 minutes.
  2. 2Pat completely dry with towels.
  3. 3Heat duck fat to 325°F. Fry potatoes in batches for 3-4 minutes until tender but not brown.
  4. 4Drain on paper towels. Let rest for at least 10 minutes.
  5. 5Increase fat temperature to 375°F.
  6. 6Fry again for 2-3 minutes until golden and crispy.
  7. 7Drain and immediately season with salt and herbs.
